VINIFICATION
Macerating in whole bunches for 2 weeks, fermenting with indigenous yeasts in the absence of sulfur and aging 18 months in old oak barrels.
ON THE PALATE
It’s cultivated in another way and gives you another pleasure. It has notes of Burlat cherry, of undergrowth, of white pepper. And at every sip, you can sense more underlying flavors.
