VINIFICATION
Long whole-grape crushing, spontaneous fermentation and maturation in old oak barrels, 18 months on fine lees.
ON THE PALATE
To the eye it is an intense, brilliant, golden yellow. The nose reveals an overwhelming variety of aromas: elderflower, lovage, woodruff, hazelnut and salted caramel, as well as fine spices such as thyme and cloves, with delicate notes of lemon, apricot, pineapple and peach. On the palate it is both compelling and possesses powerful tension. The juicy, ripe acidity strikes you at once, then leads elegantly on to a dense midsection which is characterised by a polished tannic structure and a fascinating blend.
