Spontaneous fermentation with indigenous yeasts, carried out in concrete eggs. Aged for 10 months on the lees. Unfiltered.
ON THE PALATE
Precise and mineral on the nose, with a delicate note of quince and a citrusy lift. In the background, a subtle almond nuance adds depth. On the palate, it is taut, saline, almost maritime. The minerality drives the sip, while a fine creaminess, from lees contact, accompanies the finish.
