VINIFICATION
Whole-cluster pressing and spontaneous fermentation (20–25 days) in wood for one year, followed by one month in stainless steel and then in bottle, with no filtration or clarification.

Marked minerality and aromas inspired by the Mediterranean scrub: aromatic herbs such as myrtle and hay, white flowers, fruits like golden apple, and gentle citrus and floral notes.
