VINIFICATION
88% of the fermentation takes place in 500-litre horizontal stainless-steel vats with the remaining 12% in a new 228-litre French oak barrel, with total ageing on the lees for 9 months.
ON THE PALATE
To the eye, it is clear, lemon-yellow colour. On the nose, the aroma is overwhelmingly minerally and citrus, with hints of cayenne cherry (pitanga). A taut, tart palate and pronounced salinity lend this wine a long, lingering finish.
