HARVEST
Sorted in the vineyard. In 20 kg crates.
VINIFICATIO
The grapes are crushed and trodden. One remontage per day, no sulphites and fermentation with natural yeasts. Matured in low toasted barrels for 12 months.
ON THE PALATE
Brilliant red to the eye. On the nose it presents itself with aromas firstly of grilled pepper and then of olive, thyme and rosemary. On the palate it is both fresh and fragrant, the power coming later when the Syrah 'pepper' is released in the mouth. Round and silky, it has a surprising longevity in the mouth. A powerful and stunning wine, accessible from both an early age and during ageing.
