VINIFICATION
The grapes, hand-harvested from vineyards worked with horse-drawn ploughing, are whole-cluster pressed and undergo spontaneous fermentation in barriques with bâtonnage. The wine then ages for 12 months in French oak and 6 months in stainless steel on the fine lees, developing complexity, creaminess and depth.
ON THE PALATE
On the palate, it is full and enveloping, lifted by vibrant acidity that brings energy and freshness. Elegant and deep, with a long mineral finish that enhances its distinctive character.
