Alcoholic fermentation for 2 months in oak barrels from the woodlands of the Vosges and Allier, utilizing indigenous yeasts. Malolactic fermentation is added in spring, with an aging period of 18 to 22 months.
ON THE PALATE
The palate expresses a hint of floral notes, fresh and crisp apple, anise, fennel and a hint of white pepper with slight woody nuances. We can also find flint, vanilla, a hint of candied fruit and a harmonious minerality. Of great persistence.
