VINIFICATION
Alcoholic fermentation for 2 months in oak barrels from the woodlands of the Vosges and Allier, utilizing indigenous yeasts. Malolactic fermentation is added in spring, with an aging period of 18 to 22 months.
ON THE PALATE
The bouquet has hints of apples, grapefruit and lime, whilst also displaying a certain red fruitiness. On the palate it expresses a distinct minerality. Complex and fresh, it is produced avoiding excessive use of wood, the focus being on a lean body and full of finesse. It is one of the winery's most interesting wines.
