Alcoholic fermentation for 2 months in oak barrels from the woodlands of the Vosges and Allier, utilizing indigenous yeasts. Malolactic fermentation is added in spring, with an aging period of 18 to 22 months.
ON THE PALATE
A floral bouquet with notes of clementine, characterized by an abundance of minerality and freshness. On the palate it has a pleasant saltiness, and reveals a generous and powerful character, with hints of apple and citrus, crisp and with a long finish.
