GRAPES
85% Grenache + 15% Syrah.
HARVEST
By hand, at the limit of the grapes' over-ripening.
VINIFICATION
Maceration for 20 to 25 days, maturation in oak barrels for 12 to 15 months, light filtration.
The Grenache is vinified separately and matured for fifteen months in oak barrels before being blended with the Syrah. This cuvée is distinguished by a grape harvest picked at the limit of over-ripeness, weather permitting at the end of September, on old vines of 50 years of age with a low yield.
ON THE PALATE
An explosive red-fruit salad.
The persistent "mistral" favours an abundant exchange of aromas.
