VINIFICATION
Whole bunch crushing, separation of first and second pressing - only the second is used to make this wine. Spontaneous fermentation in 600 L - 1000 L horizontal stainless steel vats (35%) and used French oak barrels (65%). 8 months “sur lies” - on fine lees. Without battonage.
ON THE PALATE
Citrusy colour. Even more mineral, even more salty, even more marine than Arinto dos Açores. To the nose it evokes low tide, when the waves retreat and the rocks emerge.
