VINIFICATION
The winemaking process begins with a short skin maceration, followed by approximately two weeks of fermentation in Clayver vessels and chamotte jars. After ten months of ageing, the wine is bottled and undergoes secondary fermentation in the bottle without disgorgement. No malolactic fermentation, filtration or fining is carried out, preserving the wine's purest and most authentic expression.

Fresh and vibrant on the palate, with marked salinity and bright acidity. Bottle fermentation and the absence of filtration enhance its natural complexity, delivering remarkable depth and a long, persistent finish.
