VINIFICATION
The grapes were destemmed and crushed, followed by a short cold maceration in stainless steel tanks and gentle pressing. Spontaneous fermentation took place in chamotte clay vessels. The wine then spent a minimum of 10 months in bottle for secondary fermentation and ageing on the lees.
ON THE PALATE
The nose opens with an elegant interplay of fresh flowers and herbs, lifted by a subtle saline breeze that evokes the sea. On the palate, it is light and vibrant, unfolding notes of violet, citrus, and cherry, brightened by a delicate saline touch. The mousse is creamy and enveloping, carrying the wine through to an exceptionally long finish.
